Nothing like sweet and salty to satisfy your taste buds and strawberries and pretzels fit perfectly. Even though this dessert is easy to make it taste as though you spent hours creating it. All together it takes about 30 minutes to create not counting the cooling time, but don't forget to allow time for at least 2 hours of refrigeration. Enjoy!
2 cups pretzel crumbs
1/2 cup butter, melted
1/3 cup brown sugar
1 1/4 cup sugar
3 tbsp cornstarch
1 pkg strawberry gelatin (3.5 oz)
1 1/2 cup water
6 cups strawberries, hulled and halved
Create the pretzel crumbs from 4 cups of stick pretzels. Place the pretzels in a food processor and pulse until the consistency of course crumbs. Watch carefully or the pretzels will be pulverized! Pour the crumbs into a large bowl and add the melted butter and brown sugar. Mix well and then press into a 11 by 9 in pan. Bake for approximately 8 - 10 minutes in a 350 degree oven. Remove and set aside to cool.
In a large saucepan, add the sugar, cornstarch, gelatin and water. Stir together and bring to a boil over medium heat. Reduce the heat and continue cooking until it starts to thicken. This should take 2 - 4 minutes. Remove from the heat and cool for 15 - 20 minutes.
Mix the strawberries and the sauce together gently so as to not crush the strawberries. Let the mixture set for 10 minutes. Spoon over the cooled crust. Refrigerate for at least 2 hours. Serve with whipped cream.
