I love lemon cake, pie, cookies and especially lemon bars. For a lemon dish to be perfect it has to have both sweet and tart flavors that are perfectly balanced. These bars are perfect. The best part is they are so easy to make. If you need more than 12 bars, I suggest doubling the crust recipe and tripling the filling for a 9x12 pan. Enjoy!
Ingredients (12 bars)
Crust
- 1 1/3 cups flour
- 1/4 cup sugar
- 1/2 cup butter, softened
Filling
- 2 eggs
- 3/4 cup sugar
- 2 tbsp flour
- 1/4 tsp baking powder
- 1/4 cup lemon juice
- 1 tsp lemon zest
- pinch of salt
Garnish
- powdered sugar
- lemon zest
Directions
Grease an 8x8 in pan and line with parchment paper. (Photo A)
Combine all the crust ingredients in a bowl. Beat at low speed until the ingredients resemble course crumbs. Pour into the baking pan (Photo B) and press onto the bottom of the pan. (Photo C) Bake at 350 degrees for 15 - 20 minutes or until the edges are slightly brown.
Combine all the filling ingredients in a large bowl. Beat at low speed until well mixed.(Photo D) Pour the filling over the hot crust. Continue baking for 18 - 20 minutes or until the filling is set. (Photo E)
Cool the bars completely. Remove from the pan using the parchment paper as handles. Cut into bars. (Photo F) Sprinkle with powdered sugar and garnish with lemon zest. (Photo G)
