Do you need an appetizer to go with your margaritas for Cinco De Mayo? Just plain salsa and chips with margaritas is great in a pinch, but with just a little bit of time you can bring your chips to a whole new level. Lots of flavor to enhance your perfect margarita.
Ingredients (Serves 10-12)
- 1 lb ground beef
- 1/2 cup diced onion
- 1 package taco seasoning mix (hot and spicy)
- 1 bag Tostitos scoops
- 1 cup sharp cheddar cheese shredded
- 1 jar salsa (hot)*
- sour cream*
Brown and crumble the ground beef in a skillet on medium high heat. Add the onion with the ground beef and cook until the onion is translucent and the beef is browned. Drain the beef and return it to the skillet.
Add one package of taco seasoning mix and 3/4 cup water. Cook until the sauce has thickened. You can use the mild seasoning mix if you don’t like the spicy.
Place the chips on a baking sheet in a single layer. Spoon 1 tsp of the beef mixture into each chip and top with the cheddar cheese. Bake at 350 degrees just until the cheese melts.
Serve the chips with salsa, sour cream and your favorite margarita! Happy Cinco De Mayo
